The owners of Central Standard Craft Distillery (which specializes in small-batch vodka, whiskey and bourbon using locally sourced ingredients) have some good news for fans of spirits and food. They’re opening their urban crafthouse and kitchen (320 E. Clybourn St.) on Saturday, Aug. 14.
The location is the renovated 1874 Wisconsin Leather building. The three-story, 11,700-square-foot space features a tasting room, tour operation, restaurant, private-events space and rooftop patio. It also will house a 100-gallon pot still that’ll produce all spirits served and sold on site.

To celebrate the opening, founders Evan Hughes and Pat McQuillan are offering some deals. Along with the planned free toast at 3:20 p.m., they will offer old fashioned cocktails featuring Central Standard Red Cabin Bourbon and North Wisconsin Brandy for $3.20 each. And everyone who visits during grand opening festivities (11 a.m. – 2 a.m.) will receive a BOGO coupon to use on a return visit.
Their executive chef, Franklin Perdue, has created a menu that includes snacks, soups and salads and larger plates. Examples include a vegetable relish tray; fried smelt; fries and aioli, cheese and charcuterie; corn soup; nduja cavatelli with pomodoro sauce; whole roasted hen with broccolini, lemon and aleppo; and an aged rib-eye steak with fondant potato, horseradish and chevre ($7-$46). The dishes are meant to complement Central Standard’s spirits.
Hours: Sun-Thurs 11 a.m.-midnight; Fri-Sat 11 a.m.-2 a.m. The rooftop bar closes at midnight.
