Recipe #30: Gluten Free Banana Bread

It’s here: the best friggin banana bread recipe EVER. Seriously. The best and only recipe you’ll ever need for the rest of your days.

Here’s what you’ll need:

  • 3 small very ripe bananas, mashed
  • 2 eggs, beaten
  • 1/4 cup raw honey
  • 1/4 cup brown sugar
  • 1 cup full fat yogurt (I use White Mountain)
  • 1 cup almond flour
  • 1 cup gf flour blend (I use Bob’s Red Mill or Cup 4 Cup)
  • 1/2 cup rolled oats
  • 2 tsp baking powder
  • 2 tsp ground cinnamon

Optional:

  • 1/2 cup protein powder (I use Ritual)
  • 1/2 cup pecans (or any mix of your fave nuts)
  • 1/3 cup chocolate chips

Ok so I know you should mix the wet and dry in separate bowls but hear me out – this is not a fancy recipe and you don’t have to do it 🙃  But I do have an order: mash the bananas, then whisk in the eggs, then the honey, yogurt, and lastly brown sugar.

The SECRET is in the yogurt! It seriously makes all the difference – the bread stays moist but fluffy!

Once that’s well incorporated you can add in the almond flour, gf flour blend, oats, cinnamon, and baking powder (and protein powder if using).

Next, fold in the chocolate chips and pecans if you’re adding them.

Lastly, line a loaf dish (or a 8×8 dish) with parchment paper and pour the batter in evenly. Optional: add more chocolate chips and nuts on top and a drizzle of honey. Bake for 35 mins if using a loaf dish or 25 mins if using a 8×8 pan at 350 degrees. Enjoy!!
