Steak & Waffles with Mango Mint Sauce

Waffles are the way to herald in a really epic weekend. Let’s just say that the details of dozens upon dozens of memory-making weekends are seared into my brain – the ones that started with waffles always ended up beyond wonderful. Steak and Waffles with Mango Mint Syrup

Now my recipe for Steak & Waffles with Mango Mint Sauce sounds incredibly crazy, but it’s amazingly delicious – trust me! Just imagine fluffy-slash-crunchy waffles topped with an unexpectedly exotic sweet-and-savory spin. Read on to get this creative waffle recipe that’s perfect for Mother’s Day brunch.

This sweet, spicy and savory beef breakfast is a must make for mother's day or father's day.

The recipe is super simple to make using your frozen waffle of choice — check out some of the gluten-free waffles and paleo waffles out there if you have these dietary needs.  If you have time to make your own waffles, that works too! Check out my Paleo Protein Waffle & Pancake Mix recipe for that.  Next, you’ll need some leftover beef on hand – top sirloin or tenderloin filets (both lean cuts) chopped into bite-sized pieces are my favorite. You can also use leftover brisket or roast it if is not heavily seasoned – even ground beef crumbles work!

The syrup (more like a fruit compote) is fruity, exotic and simple to make – it also features better choices for sweetness that white table sugar or corn syrup. The natural sweetness from a mango, just a bit of real maple syrup and lime juice do the trick in a wholesome way – mixing in mint at the end makes this waffle syrup extra special. 

Because the waffles are frozen, the steak is leftover, and the “syrup” only takes 5 to 7 minutes to simmer on the stove top, you can have this creative waffle recipe done start to finish in 15 minutes MAX. It’s great for the youngsters to help with OR older kids can make these beef waffles completely on their own!

Steak and Waffles with Mango Mint Syrup

Celebrate your mom with a stack of crispy waffles piled high with tender steak bits and a spicy, sweet mango mint syrup! It's a breakfast or brunch she'll never forget and easy enough for older kids to make.

Course: Breakfast, brunch

Ingredients
  • 12 ounces cooked beef Steak, chopped into bite-sized pieces
  • 1 mango, finely diced
  • 1/2 jalapeño pepper, seeded and finely diced
  • 1/4 cup real maple syrup
  • 2 teaspoons lime juice
  • 4 frozen waffles toasted
  • 1 tablespoon chopped fresh mint
  • Additional real maple syrup
Instructions
  1. In medium pot, combine chopped steak, mango, jalapeno, and maple syrup in small saucepan. 

  2. Bring mixture to a boil, reduce heat, and simmer approximately 5 or until sauce is consistency of syrup and beef is heated through.

  3.  Remove from heat and stir in lime juice.

  4. Place lid on syrup and beef mixture to keep warm while waffles cook. Prepare waffles according to your favorite recipe or the manufacturer's instructions if using frozen waffles.

  5. Once waffles made, stack two to a plate (making 4 plates) and top with equal portion of the beef mango mixture.

  6. Drizzle with additional syrup if desired and a fresh mint sprig.
