The Fusion of Cajun and Texas Barbeque

I’ve talked before about how excited we were for the opening of The Switch in Dripping Springs. Elisabeth is a big fan of Cajun food but we don’t eat nearly as much as we could or should. So when we heard about the concept here we were all on board.

We went there early in the morning on opening day and were a little disappointed that the Cajun food wasn’t served until after 4:00 pm. Then again that just means we have to come back another time and get more. Which we did.

We came back after four a couple of weeks later and were excited to see that the Cajun specialties are now available all day. We can finally get the gumbo. Imagine our disappointment when they told us when they were out of gumbo. That’s to be expected with new openings and figuring out how much you need of everything and how it will all work, but we were still sad. I had some nice biscuits with crawfish gravy and Elisabeth filled up on dirty rice. And then the surprise happened.

As we were leaving we mentioned to the manager how disappointed we were that they had run out. Moments later she came out with a nice big bowl of gumbo just for us. Turns out they just finished making a batch and she wanted us to give it a try and I’m glad we did.

That really is brisket in the roux and it really is served over a scoop of their potato salad. It’s everything it sounds like it could be. It’s easily my favorite thing I’ve had there so far and I would tell anyone going to The Switch to make sure you get the gumbo. This is exactly what Elisabeth and I always imagined The Switch to be and we couldn’t be happier about it. I think you’ll be happy as well.
