Bubbles and Beats at The Fairmont
Up on the 7th floor is the beautiful pool and patio where Rules and Regs is making amazing cocktails and upscale bar food! They recently started a bubbles and beats series on Sunday afternoons where you can hear tunes from local DJ’s and enjoy discounted cocktails and champagne (plus, that view).
We enjoyed a delicious bottle of Moët & Chandon to start the afternoon off. We also ordered several snacks like the Mexican shrimp cocktail with poached shrimp, onion, cucumber, avocado, chili-lime cocktail sauce and tortilla chips. My favourite was the tuna spring roll with togarashi, avocado, spinach, pickled onions and sesame mayo. So refreshing!
It was time for a few cocktails – the Gris Paloma with patrón silver tequila, pinot gris, giffard crème de pamplemousse and grapefruit-lime soda and Daisy’s Siesta with espolon blanco tequila, bacardí coconut rum, cointreau, lime, coconut water and a coconut salt rim. Again, super refreshing and delicious! I can’t imagine more pool-friendly drinks.
These fish tacos… Soooo delicious! It comes with roasted spicy fish, tomatoes, cilantro, pickled onions, cabbage, chimichurri-ranch with habanero salsa on the side.
Ya know this girl got a cheeseburger and fries! Oh, and another cocktail 😉
A big juicy angus beef patty, house cured bacon, special sauce, melted jack cheese, onion jam nestled on butter lettuce sans bun + housemade chips and thick cut french fries. This burger was so yummy! The pink drink is called the Lady Bird Sling and is made with beefeater london dry gin, cherry heering, martine honeysuckle, pineapple, lemon, agave syrup, and orange bitters. This is my happy place.
Can’t forget the fresh fruit options like these huge pieces of watermelon with chili lime salt and cantaloupe with mint furikake! Can we get more pool and patio bars to have fresh fruit on their menu?!
