Strawberry balsamic mousse, 07.07.18

Five years after our first attempt at a Hidemi Sugino-inspired recipe, Odile and I returned to his works for an afternoon bake date. She picked up copies of his Dessert Book while in Japan last year (autographed, no less!), and we’d long intended to dive in and explore a few recipes. We selected two relatively simple ones, which nonetheless took us every bit of 8 hours to do (allowing for a break for lunch and to head to a Sky Candy showcase).

The mousse showcases some of her prized balsamic vinegar beautifully; the caramelized strawberries get a splash of it before being arranged with a lovely mousse and a small disc of joconde. We each took two to decorate the tops of; can you guess whose is whose?
